Featuring high carbon VG10 steel core and soft steel outer cladding that provides exceptional sharpness, edge retention, and easy maintenance.

The Sujihiki is the Japanese slicing knife, designed for cleanly slicing meat proteins, fish fillets, hams and roasts. Its extra-long, slender blade with a mostly straight edge excels at producing thin, precise slices without tearing. The gentle curve towards the tip and narrow blade allow an easy rocking motion when slicing meats into portions or breaking down fish. Sujihiki lengths range from 24 cm to 36 cm the longer blade promotes slicing in one singular motion for a clean cut.
